The grapes from the five lots, or “crus”, are harvested separately and at different times, according to the development of the climate and the degree of phenological ripeness. First the best grapes of the lots 1+2, 3, and 4 are harvested, producing three different batches of wine. The remaining grapes are then crushed in two different containers, producing two more batches of wine. The resulting 5 different products are then analyzed and tasted, and, either individually or in blends, turned into Brunello di Montalcino, Rosso di Montalcino, Sant’Antimo.
